It all started with beer. Since 1998, the team behind 7 Colinas has been exploring fermentation, perfecting each recipe until founding their own brewery in 2017. Today, they craft over 30 styles of craft beer, always driven by a passion for innovation and pushing boundaries.

Over time, the same curiosity that led them to revolutionize beer inspired them to push things forward: and what if we distilled what we ferment? This question sparked the creation of Sep7imo, the natural evolution of 7 Colinas. A laboratory of exploration where whisky, gin, and honey rum are crafted with the same artisanal spirit and relentless pursuit of quality. Today, they produce 4 types of gin, 3 types of whisky, honey rum, and mead, bringing the craft essence beyond beer and into the world of fine spirits.
