It all started with beer. Since 1998, the 7 Colinas team has been exploring fermentation, perfecting each recipe until they founded their own brewery in 2017. Today, they produce more than 30 styles, always with the same passion for innovation and challenging standards.

Over time, the curiosity that led them to revolutionize beer prompted them to go a step further: what if what we fermented was distilled? Thus was born Sep7imo, the natural evolution of 7 Colinas. An exploration laboratory where whiskey, gin, and rum are developed with the same artisanal spirit and the same relentless pursuit of quality.

Currently, they produce four styles of gin, three types of whiskey, honey rum, and mead, taking the essence of craft beyond beer and exploring new paths in the world of spirits.
